Okay everyone. We just completed day 2 of our Wellness challenge and here’s the nItty gritty.
For breakfast, chef made Huevos Rancheros without the tortilla’s using eggs, feta, avacado, black beans, tomatoes, cumin, sea salt, and black pepper. We had agreed to use rye but forgot the rye so Chef put this dish over brown rice. It was delicious and we didn’t feel deprived at all.
Through the day we drank iced tea with lemon and no sugar and water infused with basil and pears.
Lunch was a garden salad with potatoe salad made with Greek yogurt, not mayo, and we actually liked it better than traditional potatoes salad. So far so good.
Dinner was healthy lasagna made with no pasta. It was simply divine and the ingredients were a lean, white turkey marinara meat sauce over zucchini, squash, carrots and onion with parmesan cheese. The flavor was unexpectedly AMAZING.
We’re allowed two healthy snacks a day and only opted for one…..popcorn.
We weren’t 100 percent on target as one soda was consumed by each of us, diet version……Some habits die hard!
