WOW! Tomorrow marks the halfway point on our 30 day couples wellness challenge journey. Since today was the last day of week 2, I weighed in (as I weigh in once a week) and to my surprise, I lost 3 more pounds, for a total of 5 pounds in two weeks, simply by ridding my meals of any processed or fried foods as well as sugar, white flour, amd unhealthy fats. Incredible! Speaking of incredible, here’s a recipe Chef created for tuna salad WITHOUT Mayonaisse. Just because it’s done a certain way doesn’t mean it’s the only way!

2 cans chunk white tuna
1 diced plum tomato
4 scallions chopped
1/2 cup Kalamata olives chopped
1/2 cup feta cheese
Juice of 1 lemon
Salt and pepper

Mix up and put on the healthy item of your choice including lettuce, pita, salad, etc.
